Smoked Salmon

Today’s job – smoking salmon.

First I soaked it for eight hours in a brine of brown sugar, pickling salt, bay leaves, pepper and cold water.
Basted with maple syrup, soya sauce, garlic and ginger, and it's ready for the smoker.
Ready for eating or for the freezer.
